Linda's Homemade Granola
2lb of rolled oats
1 lb or wheat OR rye flakes
1 cup sesame seeds
1 cup chopped almonds
1 cup Valencia peanut (optional)
2 cups cashew bits
1 cup chopped hazelnuts
1 cup chopped Brazil nut
1 ½ cups of pepitas (green pumpkin seeds)
1-2 lbs of whole raisins
I buy all raw grains and nuts at the local health food store. Set oven at
200 degrees.
With your hands mix all ingredients except for rains in a large bowl and
pour into as many ungreased baking dishes as you need. Bake in 200 degree
oven overnight. Stir in the morning - if not toasted enough return to oven.
DO NOT RAISE OVEN TEMP. Slow roast releases oils from nuts so there is no
need to add oils or other commercial additives to your granola.
Remove from oven stir to cool. After granola is totally cooled stir in raisins.
Bag the granola. It can be stored in refrigerator or freezer until ready
to enjoy! We serve our granola with plain yogurt, fruit, honey and/or other
sauces on the side. It is good as a topping on French Vanilla ice cream too!
